Ingredients
3 ripe bananas, well mashed
2 eggs, well beaten
2 cups flour
3/4 cup sugar
1/2 cup dried cranberries
1 teaspoon salt
1 teaspoon baking soda
1/2 cup coarsely chopped walnuts
Directions
Preheat the oven to 350F.
Grease a loaf pan.
Mix the bananas, cranberries, and eggs together in a large bowl.
Stir in the flour, salt, sugar, and baking soda. Add the walnuts and blend.
Put the batter in the pan and bake for 1 hour.
Remove the pan to a rack.
Serve warm, toasted, cold, as you like it.

The recipe doesn't call for any oil or shortening, so I added 1/3 cup vegetable oil. It turned out well. It produces a dense bread, the kind that's better a day or two later. I would make it again. Going to try it toasted tomorrow; bet it's good!
