Ingredients

small, dark fruitcake (750 grams)
white chocolate melts
milk or dark chocolate melts
sherry
additional sultanas (optional)
small quantity red glazed cherries

Directions

  1. Crumble fruitcake into bowl, making sure it is well broken up.

  2. Place sultanas in saucepan, cover with Sherry and bring to a boil, stirring frequently.

  3. Cool.

  4. Add to cake mixture and mix well.

  5. Mixture should be soft, but not sloppy (able to hold it's shape when rolled into balls).

  6. Take spoonfuls, roll into balls about the size of small golf balls, place on tray lined with foil and chill overnight. Next day, melt dark chocolate and dip fruit balls into it, making sure they are completely covered.

  7. Allow to set. This does not take long.

  8. Melt white chocolate and drizzle a small amount on top of puddings to resemble custard.

  9. Top with tiny piece of red glazed cherry.
