Ingredients
8 ounces dark chocolate
8 ounces bought or ready-made plain or chocolate cake
2 tablespoons apricot preserve
2/3 cup heavy cream
1 tablespoons maple syrup
strawberries
raspberries
kiwi
red currants
Directions
Melt the dark chocolate and spread it evenly over a large sheet of baking parchment.
Allow to harden in a cool room.
When just set, cut the chocolate into 2-inch squares and remove the paper. Make sure your hands are as cool as possible and handle the chocolate as little as possible.
Cut the cake into two 2-inch cubes, then cut each cube n half. Warm the apricot preserve and brush it over the sides of the cake cubes. Carefully press a chocolate square onto each side of cake cubes to make 4 chocolate boxes with cake at bottom. Chill for 20 minutes.
Whip the heavy cream with the maple syrup until just holding it shape. Spoon or pipe a little of the mixture into each chocolate box.
Decorate the top of each box with prepared fruit. If desired, the fruit can be dipped into melted chocolate and allowed to harden before putting into the boxes.
