I usually make it the night before I serve it. Lime Jell-O was used by my grandma.

Ingredients

1 large package or 2 small packages Jell-O, any flavor
1 can crushed pineapple, in juice
1 small tub Cool Whip or other whipped topping
1 small tub cottage cheese

Directions

  1. Empty can of crushed pineapple into saucepan.  Bring to a boil.

  2. Stir in Jell-O until it is dissolved.  Remove from heat.  Let it cool for about 10 minutes.

  3. While cooling - mix cool whip and cottage cheese together.

  4. After cooling - stir Jell-O/pineapple mixture into cool whip/cottage cheese mixture.  Mix until well mixed.

  5. May be left in the mixing bowl or pour into a Jell-O Mold or pour into a decorative bowl.

  6. Chill for at least 2 hours in the refrigerator.

I have made it with many flavors of Jell-O.  Orange, grape, banana/strawberry, strawberry.  They all work well. Orange tastes like a dreamsicle.  Lime and strawberry make pretty green and red.  Perfect for the holidays.  If you have the time, you can make lime, let it cool in a clear bowl, then make strawberry, and pour it over the lime. Most people think it is a desert.  It doesn't have to be.
