This recipe was always made by mom at Christmas time. It has been a family favorite for years. It is light, and great to eat after a big meal such as at the holidays.

Ingredients
4 cups water
1 cup granulated sugar
1/2 cup SMALL pearl tapioca - look at your local bulk food store
1 large container Cool Whip
1 can mandarin oranges, drained
One 12 oz. can crushed pineapple, drained
3 bananas, sliced
Directions
Bring water to a boil in sauce pan and cook the tapioca until it turns clear (about 10 minutes), stirring often.
Add 1 large OR 2 small boxes of red Jell-O. I use strawberry.
Remove from heat and put into large mixing bowl. Let it set up. (Overnight works, too.)
Mix with the mixer to incorporate the tapioca balls back into Jell-O.
Add the following ingredients, mixing after each addition: Cool Whip, mandarin oranges and crushed pineapple.
Fold in the sliced bananas so that the mixer doesn't mash them.
Now it is ready to serve.
Must keep refrigerated. This will last about three days, that is if there is any left! ENJOY.
