Ingredients
3/4 cups butter
1/4 cup brown sugar
1 cup flour (nuts optional)
2 (8 ounce) packages cream cheese
1 cup sugar
1 teaspoon vanilla
1 1/2 cups heavy whipping cream
2 envelopes unflavored gelatin
1 cup cold water
1 cup boiling water
1 cup sugar
4 tablespoons lemon juice (drops of yellow food coloring)
5 cups diced mangoes
Directions
Preheat oven to 375 degrees.
Grease a 13x9 inch cake pan.
Cream the butter & sugar, add the flour, then nuts, if using.
Spread on the bottom of pan.
Bake for 10 minutes.
Cool.
Beat the cream cheese until softened, add sugar and vanilla.
Beat the heavy whipping cream until stiff.
Fold the cream cheese mixture into the whipped cream, pour over cooled crust.
Refrigerate.
Sprinkle gelatin over the cold water to soften, add the boiling water, sugar and stir till thoroughly dissolved.
Add lemon juice and food coloring and mix well, add mangoes and chill till gelatin becomes easy to mound.
Pour over cream cheese filling and chill until firm.
