Ingredients
2 tablespoons unsalted butter
4 firm bananas, peeled and cut in half lengthwise
1 cup brown sugar
2 tablespoons fresh orange juice
2 tablespoons dark rum
2 tablespoons heavy cream
1/4 teaspoon nutmeg
2 cinnamon sticks
1 teaspoons vanilla extract
vanilla ice cream
Directions
Preheat oven at 350 degrees.
Coat a 9 inch ovenproof baking dish with 1 tablespoon butter.
Place bananas cut side down in the buttered dish.
Place brown sugar and remaining butter in a heavy saucepan over medium heat and cook until sugar liquefies.
Add orange juice, rum, cream, nutmeg and cinnamon sticks and bring to a boil. Cook, stirring with a wooden spoon until mixture is well blended, about 2 minutes. Off heat, stir in vanilla.
Pour sauce over bananas.
Bake for 15 minutes until bananas are warmed through and sauce is bubbly.
Discard cinnamon sticks. Serve warm with vanilla ice cream.
