Ingredients
2 handfuls of snow peas
1 red pepper
1 bunch green onions
2 tablespoons butter or margarine
Directions
Wash all the vegetables in cold water.
Clip the blossom ends off the snow peas.
Core the red pepper; cut into long thin strips.
Use only the white tips of the green onions (save the remainder for another use); cut them into pieces about 1/4" .
In a large pot, boil 2-3 liters of water until rapidly boiling.
Toss in the snow peas and red peppers for about 2 minutes (until the snow peas expand-they should remain crunchy).
Immediately immerse in cold water.
Let cool.
In a large skillet, melt 2 tablespoons of butter and then add the cooled snow peas and pepper mix.
Saute until all the snow peas and peppers are glazed, add the whites from the green onions to the skillet for about one minute.
Serve while hot.
