Ingredients
1 pound red beans
2 quarts water
1 pound ham for seasoning
1 pound smoked sausage (cut into 1 inch pieces)
3 pressed garlic cloves
1 1/2 cups chopped yellow onions
3/4 cups chopped green onions
1 1/2 cups chopped celery
2/3 cups chopped green pepper
1 bay leaf
1 teaspoon Worcestershire sauce
1/4 teaspoon Tabasco sauce
1 tablespoon minced fresh parsley
1 1/2 teaspoons salt
3 cups steamed rice
Directions
Rinse and drain beans. In a large pot with a lid, place beans and cover with water.
Add ham bone and bring to boil. Reduce heat and simmer uncovered for 40 minutes.
Add sausage, cover and cook, 1 hour, stirring occasionally.
Add garlic, onions, green pepper, and a bay leaf.
Continue cooking, covered, 1 1/2 hours, or until soft.
Add Worcestershire sauce, Tabasco, parsley, and salt.
Simmer 5 minutes.
Remove bay leaf; serve over rice.
