Ingredients
2 cups unsifted flour
1 teaspoon salt
1/2 teaspoon baking powder
2 teaspoons baking soda
3 teaspoons cinnamon
1 cup oil
3 eggs
2 cups white sugar
3 teaspoons vanilla
2 cups grated zucchini
1 cup nuts (optional)
Directions
Preheat oven to 350 degrees.
Grease and flour 2 loaf pans.
Measure flour, salt, baking powder, baking soda and cinnamon in one bowl and mix together.
In a separate bowl, mix together oil, eggs, sugar and vanilla. Add dry ingredients and mix well.
Fold in zucchini and nuts.
Pour into loaf pans.
Bake for 1 hour.
Note: Bread is more moist if zucchini is frozen and thawed first.

Great recipe. Used it for regular and mini loaves. Had a lot of zucchini from the garden, so made lots of bread and froze it. Everyone loves it.

Good, moist bread. I added some spices to mine like cinnamon. When you grate your Zucchini, don't drain it.

Very good. Baked in mini loaf pans. Nice crust and moist inside. Served with soft cream cheese. I wll make this recipe again.
