Ingredients
pineapple
glace cherries
peaches
apricots/Angelica
tinned mandarin oranges
raisins
2 eggs, beaten
125g (4 ounces) butter
1 teaspoon baking powder
1 teaspoon vanilla essence
125g (4 ounces) self-rising flour
125g (4 ounces) castor sugar
Directions
Grease a tin, and set your oven to 375 Fahrenheit, 190 Celsius, gas mark 5.
In a large bowl whisk eggs, butter, baking powder, vanilla, flour and sugar. Whisk until it's creamy.
Arrange fruit upside down, in prepared cake tin. Spoon cake batter over fruit.
Smooth it out with a knife, and insert into oven.
Bake for approx. 20-30 min.
Cover with a plate and now flip over.
If all goes well, it won't break, but if it does, you tried! But be careful, it's hot!
