Ingredients
2 cups of sugar
1/2 pound butter or margarine
1 carton (15 ounce) ricotta cheese
3 eggs
2 teaspoons vanilla
4 cups flour, sifted
1/2 teaspoons salt
1 teaspoon baking soda
Frosting:
2 cups confectioner's sugar
1/2 teaspoons vanilla
4 ounces cream cheese
2 teaspoons butter
Directions
Preheat oven to 350 degrees.
Grease cookie sheets.
Cream well together sugar, butter or margarine, ricotta cheese, eggs and 2 teaspoons vanilla.
Sift together flour, salt and baking soda. Add to creamed mixture, mix well.
Drop by teaspoons onto prepared cookie sheet.
Bake until light brown on bottom (about 10 minutes).
Cool, then ice with frosting.
Frosting:
Cream together: cream cheese, 2 teaspoons butter, confectioner's sugar, and 1/2 teaspoon vanilla.
After frosting, sprinkle with red or green sprinkles.

delicious but used only 2 eggs, and 2 tablspoons of baking powder and baked 15min exactly till lightly browned. Also used powder sugar and milk, 3cups powdered sugar and 3 tbs. milk, 1 tsp vanilla for the icing. I already had this recipe with the small changes and make it frequently and have shared this reicpe each time I make them.
