Potato Coffee Cake
From the kitchen of oaksfan
I give this as Christmas gifts a lot, and have a lot of requests for it. Especially good warm with butter. It is an old family recipe
3 round loaves
3/4 cup dry potato flakes
1 cup boiling water
1 cup warm milk
3 tablespoons butter, softened
1 cup sugar
4 1/2 cups bread flour (more as needed) or regular flour
1 pk dry yeast
3 tablespoons white sugar
1/2 teaspoon ground cinnamon
3 tablespoons butter melted, or more as needed
Place water, milk, softened butter, and eggs in bottom of bread machine.
Place sugar and flour on top.
Make a well in the flour and add yeast.
When cycle is finished, remove and shape into 3 loaves. Place each in a slightly greased 8 inch pie pan and cover. Let rise until doubled in size.
In small bowl, combine 3 tablespoons sugar and 1/2 teaspoon cinnamon.
Brush risen loaves with melted butter and sprinkle with cinnamon/sugar mixture.
Bake in preheated oven for 20 to 30 minutes or until golden brown.
