Kale & Avocado Salad

This recipe came from my friend. It's super healthy and delicious! I have made this for potlucks and everyone always loves it!

1 bunch kale
Juice from 1/2 a lemon
Dash olive oil
Salt to taste
Optional toppings: sun-dried tomatoes, scallions, shredded carrots, or whatever you like
Wash and dry the kale.
Remove the spine from each leaf. I always do this with my hands. Hold the spine firmly in one hand and use your other hand to tear the leaf from the spine.
Roughly chop (or tear) the kale into bite-sized pieces and place in a large mixing bowl. Set aside.
Cut the avocado in half and remove the skin and pit. Set aside.
Juice the lemon and set aside.
Drizzle the olive oil over the kale and add salt. Massage the kale until it is wilted and tender. Taste and add more salt if necessary.
Add the avocado and mush it into the kale.
Drizzle the lemon juice over the kale and mix.
Add whatever additional toppings that you like. Serve cold.
