Ingredients

4 cups flour
1 teaspoon salt
3 teaspoons baking powder
1 teaspoon baking soda
1/4 cup sugar
1/4 cup margarine or butter
2 cups currants or seedless raisins
1 egg
1 3/4 cups buttermilk

Directions

  1. Preheat oven to 375 degrees.

  2. Combine the first 5 ingredients in large bowl.

  3. Add butter or margarine and cut until crumbly with pastry cutter or 2 knives.

  4. Mix in currants. Beat egg mixture into dry ingredients and stir until blended.

  5. Turn out onto floured board and knead until smooth, 2-3 minutes.

  6. Divided dough in half and shape into rounds.

  7. Place each loaf in an 8" cake pan or on a cookie sheet.

  8. Press down and cut crosses on top, 1/2 inch deep.

  9. Bake for 35-40 minutes.
