Ingredients
3/4 cup sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1 to 1 1/2 cups water
1 teaspoon grated lemon rind
1 tablespoon lemon juice
1 tablespoon butter or margarine
1 cup raisins
pastry for a 2 crust pie
Directions
Preheat oven to 425 degrees.
Mix together sugar, cornstarch and salt. Stir in water and bring to a boil.
Add rind, juice, butter and raisins.
Cool slightly before pouring into pan lined with pastry.
Place top crust over raisin mixture and fasten edges together well.
Slash top crust to allow steam to escape.
Bake at 425 digress for 10 minutes.
Reduce heat to 375 and bake for 30 minutes longer.
