Ingredients
2 packages frozen chopped spinach, cooked and drained
1 large chopped onion (in food processor)
4 beaten eggs
2 cups Progresso Italian style bread crumbs
3/4 cup melted margarine
1/2 cup parmesan cheese
1 cup shredded Swiss cheese
1/2 teaspoon garlic powder
Directions
When ready to bake, preheat oven to 300 degrees.
Grease baking pans or coat with non-stick cooking spray.
Cook and drain spinach; add onion, eggs, and bread crumbs.
Mix in all other ingredients.
Refrigerate for two hours.
Shape into 1 inch balls and place prepared pan.
Bake for 20-25 minutes.
Serve warm.

I have made these twice: once for a choir party, and once for my quilting group. A 3-year-old at one of the parties found them irresistible! People tell me the spinach balls are delicious, and I receive many requests for the recipe. One tip for faster cleanup: Line the baking pan with foil and coat that with the non-stick cooking spray. Last made on December 10, 2012.
