Ingredients
1/2 cup vegetable oil
3 eggs
2 cups sugar
3 cups flour
1 cup chopped walnuts
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla
3 cups of apples (cut coarsely) or applesauce
Directions
Preheat oven to 350 degrees F.
Lightly grease and flour two 8x4 loaf pans.
Mix first three ingredients and then add remaining ingredients.
Pour into prepared loaf pans
Bake for 90 minutes.
Top with glaze.
To Make Glaze:
Boil 1 stick margarine, 1 cup sugar and 1/2 cup evaporated milk.
Pour over baked bread.

I have to agree with dmzalega on the coconut oil. I use it for everything and even my fried food comes our lighter tasting. Since we have been using it our cholesterol is low. Otherwise, great recipe and just what I needed for gifts. Thanks for posting.

I found this to be so much better tasting when you use butter. Margarine makes a heavier, oily loaf. I also used butter instead of vegetable oil. May try coconut oil next - its supposed to be healthier anyway and just a bit sweeter, which is so much better than greasy. And since margarine and many veggie oils actually are worse for your cholesterol than butter, go with the good stuff. Coconut oil is supposed to be one of the "good guys" for that. I'll write again after I try coconut oil.
