Ingredients
4 ounces self-rising flour
pinch salt
2 ounces castor sugar
1 tablespoon castor sugar extra
3 ounces dried fruit
2 ounces soft butter or margarine
1 egg
3 tablespoons milk
Directions
Preheat oven to 350 degrees.
Grease and flour small loaf pan.
Sift flour and salt into the mixing bowl. Add sugar.
Toss the dried fruit with a little flour and put into a sieve or strainer and shake to remove excess.
Add the fruit to the ingredients in the bowl. Add 2 ounce soft butter or margarine.
Mix the egg and add 3 tablespoons milk. With the wooden spoon mix all ingredients thoroughly.
Put the mixture in the cake tin, sprinkling the top with the extra tablespoon castor sugar.
Bake in the middle of the oven for 35-40 minutes, until a toothpick inserted comes out clean.
Allow to cool in pan for a few minutes.
Turn out onto wire rack to cool completely.
