Ingredients
2 cups sugar
1 cup oil
3 eggs
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
2 teaspoons vanilla extract
2 cups chopped peeled apples
1 cup nuts
Directions
Preheat oven to 325 degrees F.
Grease 2 loaf pans.
In a large bowl beat together the sugar, oil, and eggs.
In a separate bowl sift together the flour, salt, baking soda, and cinnamon.
Add the dry ingredients to the sugar mixture.
Add the vanilla, apples, and nuts.
Pour the batter into the prepared pans.
Bake for 1 hour.

Everybody who tasted this bread served at a meeting I was at came up and complimented me and wanted the recipe. Forget the fruitcakes this Christmas, this recipe is dense and rich. I added pecans to this recipe and the result was elegant and understated awesome. Besides slicing and chopping apples the recipe is "a piece of cake!" If you are looking for attention and accolades from friends and family this recipe will bring it to you! P.S. I used granny smith apples and the results were amazing. Barbara Sarasota, Fl.
