Ingredients
1 1/2 cups cranberries, halved
1 cup confectioner's sugar
4 cups flour
6 teaspoons baking powder
1 teaspoon salt
1/2 to 3/4 cup sugar
2 eggs beaten
2 cups milk
1/2 cup butter, melted
Directions
Preheat oven to 350 degrees.
Grease 2 muffin tins (12 each).
Toss berries with confectioners sugar and set aside.
Sift dry ingredients together and make a well in mixture.
Add eggs, milk and butter all at once.
Stir lightly until the dry ingredients are moist. DO NOT BEAT.
Fold in berries and pour into greased muffin pan 2/3 full.
Bake for 30 minutes.
