I created this recipe for people that have Celiac disease so they can enjoy cookies to. I use these cookies for a crust for my no bake peanut butter pie.

Ingredients
2 eggs
1 cup smucker's gluten free smooth peanut butter
1 teaspoon Clabber girl baking soda or Arm and Hammer
1 cup Domino's granulated sugar
1/2 cup Domino's light brown sugar
3 tablespoons Earth Balance Vegan butter sticks
1/8 teaspoon sea salt
1 cup King Arthur measure for measure flour
1 can Pam nonstick cooking spray
Directions
Preheat oven to 300 degrees.
In a mixing bowl add the first 7 ingredients and mix scraping the bowl. Add the flour all at once mix just until combined.
Spray a cookie sheet with Pam. Take the cookie dough roll it into a ball as big as walnut shell place on the cookie sheet and flatten with a fork or with your hand lightly.
Bake for 20 minutes transfer cookies to a cooling rack eat hot or cold.
