Ingredients

1/4 cup margarine
2 apples, cored and sliced
4 eggs
1/2 cup milk
1/2 cup flour
1/4 teaspoon salt
2 tablespoons brown sugar
1/4 cup sugar
1/2 teaspoon cinnamon

Directions

  1. Preheat oven to 375 degrees.

  2. Place the margarine in a 10-inch oven-safe skillet and place the skillet in the oven until margarine is melted. Remove pan from oven and add apples, return to oven for 5 minutes.

  3. Mix together eggs, milk, flour, salt and brown sugar.

  4. Remove pan from oven and pour mixture over apples.

  5. Return pan to oven for 15-18 minutes, or until puffy.

  6. Mix sugar and cinnamon together and sprinkle over hot pancake.

  7. Serve immediately.

This is my recipe from years ago. I now have to eat gluten-free and just substitute gluten-free flour in this recipe. You can also use other fruit and be creative!
