Ingredients
200g self-rising flour
225g caster sugar
1/2 teaspoon salt
25g cocoa powder, sieved
100g margarine
2 medium eggs
5 tablespoons evaporated milk
5 tablespoons water
few drops vanilla essence
60g margarine
1 tablespoon cocoa powder
250g sieved icing sugar
3 tablespoons hot milk
1 tablespoon vanilla essence
Directions
Preheat oven to 180c, 350f, gas mark 4.
Grease two 20.5 cm (8 inch) tins, not loose-bottomed (spring form) as the mixture would run out.
Mix flour, sugar, salt and cocoa.
Rub in margarine. Beat eggs with milk.
Stir egg mixture, essence and liquids into dry ingredients and beat well.
Place mixture in prepared tins and bake for about 30-35 minutes.
When cold, sandwich and top with milk chocolate icing.
Melt margarine, blending in cocoa, then stir in icing sugar, milk and essence.
