Ingredients
2 pounds frozen hash browns, thawed
1/2 cup butter
1/2 cup chopped green onion
1 can (10 ounce) cream of chicken soup
3-4 cups half and half or milk
1 cup shredded cheddar cheese
Directions
Saute onion in butter.
Add soup, and potatoes.
Stir in cheese and heat gently.
Serve, may be garnished with chopped chives & bacon.

This is so easy to make and tastes great! I used cream of celery instead of the chicken soup, and added salt and pepper to taste. I added the milk in Step 2, and it had to cook for about 30 minutes for the potatoes to be tender. My husband loved it!
