Ingredients
2 cups packed dark brown sugar
1/4 cup dark corn syrup
2 egg whites
1 teaspoon vanilla
1/2 cup chopped walnuts
Directions
Preheat oven 300 degrees F.
Butter cookie pans, set aside.
In a buttered heavy 2-quart saucepan combine sugar, corn syrup, and 1/4 cup of water.
Cook and stir until sugar dissolves and mixture comes to boiling.
Cook over medium heat to 260 F (hard ball stage), without stirring.
Remove from heat.
In a large mixer bowl beat egg whites with electric mixer to stiff peaks.
Gradually pour the hot syrup in a thin stream over the beaten egg whites, beating constantly at high speed for 6 minutes. Add vanilla; beat 10 minutes more or till mixture forms a soft peaks and begins to lose its gloss.
Stir in nuts. Let stand 2 minutes.
Drop by level teaspoons onto a buttered baking sheet.
Bake for 20 minutes.
