Ingredients
1 medium/large potato, boiled and mashed
1 teaspoon vanilla
2 to 3 pounds powdered sugar
peanut butter (creamy)
Directions
Mix together potato and vanilla.
Mix in powdered sugar until you have a dough like consistency.
Roll to 1/4 inch thick. Spread with peanut butter.
Roll like a jelly roll and refrigerate until chilled.
Slice into pinwheels for serving.

I was reading an Amish romance book and it mentioned "Potato Candy" so when I saw this recipe here I had to try it out. I must say I was a bit disappointed. It is super super sweet! The peanut butter cuts down the sweetness a little, but one small piece will be enough to last me the entire holiday season. But that is just me... I feel the same way about fudge, so to each their own!
