Ingredients
2 cups flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons butter
1 cup white sugar
1 egg
1 orange (juice and rind)
boiling water
1 cup chopped walnuts
1 cup raw, sliced cranberries
Directions
Preheat oven to 325 degrees.
Grease loaf pan.
Sift flour, salt, baking powder and baking soda together.
Cream butter, add sugar and mix well.
Beat egg and add to the butter mixture.
Add boiling water to orange juice to make 3/4 cup of liquid.
Add sifted dry ingredients alternately with the butter mixture to the liquid ingredients.
Add grated orange rind, walnuts and cranberries. Combine evenly.
Place mixture into prepared pan.
Let rise for 20 minutes.
Bake for 50-60 minutes.
Loaves can be frozen. Wrap in waxed paper.
