This is one of my go-to recipes for holiday parties. Not only are the tortas really delicious, but with the green spinach, white goat cheese, and red bell pepper, they look festive, too!

Ingredients
1/2 c. pitted dates, chopped
6 oz. goat cheese
1 T. balsamic vinegar
2 tsp. extra virgin olive oil
1/2 tsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. sugar
1/4 tsp. paprika
1 garlic glove, minced
1 c. baby spinach
24 [1/4-inch thick] slices baguette, toasted
3 T. red bell pepper, diced
Directions
Combine dates and cheese; set aside.
Make vinaigrette by stirring together balsamic vinegar, extra virgin olive oil, Dijon mustard, salt, sugar, and paprika with a whisk. Add spinach to vinaigrette, tossing gently to coat.
Divide spinach mixture evenly over baguette slices. Top each slice with 1 rounded tablespoon of date/cheese mixture. Sprinkle red pepper evenly over slices.
Serve immediately and enjoy!
